Ingredients

  • 4 large potatoes peeled and diced
  • 1 cup heavy whipping cream
  • 1/2 tsp chopped garlic
  • 2 tsp chopped fresh parsley
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 1 cup chopped cabbage
  • 1 leak (white part only) chopped

Instructions

  1. In an ovenproof medium saucepan over medium heat, place potatoes, cream, garlic, parsley, salt and pepper. Cook, stirring occasionally until mixture comes to a boil, about 5 minutes. Cover and bake in preheated 400 degree oven for 20 minutes.

  2. While mixture bakes, blanch cabbage and leeks in boiling, salted water in a small saucepan just until tender, about one minute. Drain well, discarding liquid. Fold cabbage and leeks into potato mixture.

  3. Serve in a warm bowl, and top with melted butter.
